The Art of the Tea Pairing
Circa my 2023 birthday tea party in the garden!
Introduction:
Whenever you brew a functional mushroom tea, you’re stepping into an intentional rhythm. Extracting the active constituents and deeper benefits of fungi like Reishi, Maitake, and Cordyceps requires patience—a full 60-minute hot water decoction that transforms water into a rich, complex, and grounded infusion. But the experience doesn't end at the rim of your mug.
The food that sits on the plate beside your cup has the power to completely reshape your tea routine.
While pairing is often discussed in the context of wine or traditional teas, functional mushroom blends offer a distinct, rewarding spectrum of flavor. Because these teas carry grounded, umami-rich, and botanical base notes, what you pair with them can either harmonize with their depth or contrast with their richness. A bright, tart bite can lift an earthy brew for a midday focus boost, a savory sandwich can turn a cup into a complete meal, and a dense, decadent treat can turn a quiet pause into a soothing routine of comfort.
Changing the plate changes the cup. Here are four of our absolute favorite pairings straight from our kitchen to guide your tea routines.
Changing the plate changes the cup. Here are four of my absolute favorite pairings shared to inspire!
1. Reishi Red + Cacao Date Energy Balls
The Mood: Grounding Decadence & Evening Unwind
The Flavor Synergy: Reishi Red brings a deep, rich, earthy structure to the mug. Pairing it with a dense, naturally sweet cacao date ball creates an indulgent, truffle-like experience without refined sugars. The dark cacao notes amplify Reishi’s subtle bitterness, turning a functional evening cup into a comforting dessert routine.
Recipe: Cacao Date Balls
Ingredients:
200g Medjool dates
115g Almonds
7g Raw cacao
5g Maca powder
½ tsp cinnamon
¼ tsp nutmeg
Instructions:
lightly grind the nuts alone first.
combine the coarsely ground nuts with everything else in the grinder.
when the mixture begins to stick and combine together you can start rolling the balls out.
refrigerate to set for 10-20 min.
I enjoy cacao date balls with Reishi Red as my go to but Reishi Rose is also a delightful pairing.
2. Reishi Rose + Strawberry Crisp
The Mood: Brightening Comfort & Sweet Harmony
The Flavor Synergy: The delicate floral aroma of rose petals combined with Reishi creates an elegant, uplifting brew. A warm strawberry crisp—with its tart berries and buttery, toasted oat crumble—bridges sweet fruit notes with the floral top notes of the Reishi Rose. It’s a pairing that feels light yet deeply satisfying on a crisp autumn afternoon.

3. Maitake Mint + A Hefty Tea Sandwich
(Tuna or Vegan Chickpea Tuna with Lemon Garlic Hummus)
The Mood: Savory Sustenance & Midday Focus
The Flavor Synergy: Maitake Mint is crisp, refreshing, and savory-leaning. It demands a hearty, savory companion that can stand up to its lively spearmint and earthy fungal base. A thick-cut sandwich piled with tuna (or mashed chickpea "tuna") and slathered with punchy lemon garlic hummus provides rich protein and bright citrus notes that make the mint in your cup pop. This pairing turns your 60-minute tea break into a full, revitalizing midday meal.

Chickpea “Tuna” Sandos are a staple vegan tea pairing in my life. I love this recipe by Forks over Knives and my signature take is to use some lemon garlic hummus for a boost of brightness and flavor.
4. Golden Cordy + Sweet Potato Chocolate Chip Muffins
The Mood: Sustained Energy & Earthy Sweetness
The Flavor Synergy: Cordyceps offers an energetic, vibrant boost, making Golden Cordy an ideal blend for mornings or afternoon slumps. Pairing it with fudgy sweet potato brownies mirrors the natural, root-like earthiness of sweet potato with the functional energy of Cordyceps. The result is a rich, satisfying bite that fuels your body while pleasing your palate.

Pics will exist eventually because this is a recipe i’m trying tomorrow night!
Making It a Routine
The hourglass reminds us that time isn't something to rush through but rather something to inhabit.
Setting aside an hour to steep your tea, rolling energy balls, or slicing fresh bread isn't extra work. It is an active choice to reclaim your time and engage your senses.
The next time you set your tea on the stove, ask yourself: What kind of energy do I want to cultivate today? Then, let your plate answer the question.
Which of these pairings are you going to try first? Let us know in the comments below!
